Vegetable Dishes

Ingredients :

  • 6 medium eggplants
  • 1 large onion
  • 3 medium tomatoes
  • 1.5 tbsp sweet paprika
  • 2 garlic cloves
  • Half a tea glass olive oil
  • 1 tsp salt

Preparation :

  • Wash and peel eggplants partially, cut into cubes, and soak in salted water for 30 min.
  • Drain and squeeze the eggplants.
  • Add onion, oil, eggplants, diced tomatoes, and garlic to a pot.
  • Cover and cook on low heat for 10 min without stirring.
  • Add paprika and salt.
  • Cook covered on low heat for 1 hour. Serve with garlic yogurt.
