Vegetable Dishes
Ingredients :
- 6 medium eggplants
- 1 large onion
- 3 medium tomatoes
- 1.5 tbsp sweet paprika
- 2 garlic cloves
- Half a tea glass olive oil
- 1 tsp salt
Preparation :
- Wash and peel eggplants partially, cut into cubes, and soak in salted water for 30 min.
- Drain and squeeze the eggplants.
- Add onion, oil, eggplants, diced tomatoes, and garlic to a pot.
- Cover and cook on low heat for 10 min without stirring.
- Add paprika and salt.
- Cook covered on low heat for 1 hour. Serve with garlic yogurt.
