Appetizers

Ingredients :

  • 1 cup red lentils
  • 1.5 cups fine bulgur
  • 1 medium onion
  • 1 bunch parsley
  • 1 bunch spring onions
  • 5 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tbsp pepper paste
  • 3 cups cold water
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp sweet red paprika

Preparation :

  • Wash and finely chop parsley and spring onions.
  • Wash lentils, put in a pot, and add water.
  • Cook lentils with lid on for 15 minutes until soft and water is absorbed.
  • Turn off the heat, add bulgur, mix, and cover. Let bulgur sit in lentils for 30 minutes to soften. Add a little hot water if too dry.
  • In a pan, heat olive oil. Chop onion into small cubes and sauté on low for 10 minutes.
  • Add tomato and pepper paste to onions and cook for 7-8 minutes on low heat.
  • Mix cooked paste and onion with lentil-bulgur mixture, add salt, pepper, cumin, and paprika.
  • Let the mixture cool slightly, then form small balls and place on a plate.
